A light dressing of crème fraîche, soft herbs and mustard adds an elegant twist to these delicious sandwiches.

Smoked salmon and herb creme fraiche sandwiches

Butter the bread then lay the smoked salmon over half the slices.

In a small bowl, mix together the crème fraîche, mustard and herbs, then spread over the remaining slices of buttered bread.

Squeeze a little lemon over the smoked salmon. Top with the other slices of bread and trim the crusts. Cut each round into three fingers or four triangles.
