Zingy lemonade is the perfect refresher on a warm summer’s day. This recipe makes a slightly sweet drink, so if you prefer a sharper taste, add the juice of another lemon.

Put the sugar in a pan with 250 ml. cold water. Heat gently to dissolve the sugar. Bring to the boil and simmer for 2-3 minutes to make a lovely golden syrup.
Add the lemon zest and juice and stir everything together. Leave to cool.
Pour 25 ml. cordial into a glass, add ice, then top up with sparkling water. The cordial will keep in the fridge for up to five days.
